Review of April: Chicken with Roasted Lemon and Rosemary Sauce & Baked Pears with blueberries & white chocolate

Chicken with Roasted Lemon and Rosemary Sauce:
Okay...3 1/2 out of 5 stars. The chicken was light and moist but it could've been much juicier and more flavorful. The potatoes were perfect, though, with the sauce drizzled over them. The sauce needed a little something extra for the chicken...it was too plain...very good but plain. However, this recipe is definitely a keeper...I will experiment with the sauce a little. However, it will be great for winter-time cooking. BTW, I love my cast iron skillet! I need a bigger one though...it's only 10".

Baked Pears with White Chocolate and blueberries:
This was my own creation and it rocked!!!! I baked the pears (3 whole cut into 6 halves) with a little bit of butter and sugar/cinnamon on top of each half in a small 8x8 baking dish (which is on par with baked fruit, like apples)...but then I melted 3 oz. of white chocolate (add milk to desired consistency...about a tbsp) and poured it over the baked pears in single serve dishes. I topped it off with about 8-10 blueberries. The tartness of the blueberries really complimented the pear and chocolate. So scrumptious!!! I will defintely makes this again...several times. :-) It's soooo easy and so satisfying.

Tonight: Ocean Purch & Asparagus are what I will be eating for dinner...but I don't know what recipes I will use yet...stay tuned. :-)
